  • 1 apple (cut into small cubes)
  • 100 grams plain flour
  • 150 grams mascarpone cheese
  • 40 grams butter
  • 5 tablespoons sugar
  • 2 eggs (separated)
  • 5 grindings baking powder
  • cinnamon
  • salt

Method

  • Beat the egg whites with a pinch of salt into a white, stiff, but not dry mixture. Set aside.
  • Mix together flour, sugar, baking powder, cinnamon. Add egg yolks, melted butter and mascarpone. Add an apple. The batter will be lumpy but do not worry.
  • Gently incorporate beaten white eggs and mix together thoroughly.
  • Spoon the batter into the greased muffins pans.
  • Bake them in the pre-heated oven at 180 C for 25-30 minutes until golden brown.
