Mascarpone Apple Cinnamon Muffins

Beat the egg whites with a pinch of salt into a white, stiff, but not dry mixture. Set aside. Mix together flour, sugar, baking powder, cinnamon. Add egg yolks, melted butter and mascarpone. Add an apple. The batter will be lumpy but do not worry. Gently incorporate beaten white eggs and mix together thoroughly. Spoon the batter into the greased muffins pans. Bake them in the pre-heated oven at 180 C for 25-30 minutes until golden brown.

Introduction
The combination of apple and cinnamon is a perfect one. In this recipe I used mascarpone as an alternative for sour cream. It gives a certain tenderness. They came out delicious and moist. Believe me, they are not heavy, they are just perfect!
