Boy's (or Girl's) Pasta Sauce

Wear an apron - bubbly tomatoes stain beautifully. I start off with sweating the chopped onion & garlic in olive oil, adding chopped carrot & celery. Then in goes a tin of tomatoes, along with their juice, tomato puree and a teaspoon of Marigold veg bouillon powder. I then add mushrooms and a skinned red pepper. Plenty of black pepper and oregano & let it bubble on the stovetop for about 30 minutes, adding a little water if you think it needs it. If the oven happens to be on, shove the pot in there on a low temperature - about 150 degrees C - Gas mark 3. Once cooked, allow to cool & whizz in a blender, or use one of those hand blenders. Serve with child's favourite pasta & cheese... very tasty! It freezes really well, when the boys were little, I'd freeze it in individual portions, it takes a very short time to defrost! Makes a very quick lunch or tea, as you can defrost the sauce in the pan you're heating it in while the pasta cooks! You can add whatever veg you like to it also! I say these veggies are hidden, but the lads know exactly what's going in as they like to help with the chopping..

Introduction
A great pasta sauce much loved by my boys - good for hiding loads of veggies!! It's a nice one for the kids to help with too - plenty of chopping to be done, and like Nigella I'm all for child labour in the kitchen!
