Ingredients

Metric Cups
  • 250 millilitres water
  • 100 grams butter
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 150 grams flour
  • 4 eggs (at room temperature)
  • 8⅘ fluid ounces water
  • 4 ounces butter
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 5 ounces flour
  • 4 eggs (at room temperature)

Method

Cream Puffs is a community recipe submitted by zoagli81 and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • You bring to a boil the first four ingredients together.Then you remove the pan from heat and add the flour all at once. Put the pot on the stove and mix the dough until this comes off the sides of the pan. The dough is ready when it turns around and begins to make a noise like cri ... cri ... cri ...At this point remove from the heat and keep mixing for another minute.
  • After the dough has cooled down a bit add the eggs one at a time and stir well so that you have perfectly blended the egg before adding the next.
  • Now the dough has to rest half an hour, after which you put small amounts of dough on the pan with the aid of the pastry bag or a teaspoon. Heat the oven to 250C, place the cream puffs in the middle of the oven and let them cook for about 7-8 minutes until they are slightly colored.
  • When the puffs are baked don't forget to leave them for 5 minutes with the oven off before you take them out.

    Prepare a pastry cream flavored with grated rind of a lemon and pipe into the puffs. You can also make a caramel "strange" prepared by dissolving 70 g. of sugar with 2 tablespoons of water. Boil for about 5 minutes and pour over stuffed cream puffs.

    Makes about 32 puffs
