Seafood 'Leftover' Quiche

Introduction

I hate throwing away leftover seafood and never seems to know what to do with it, but this seems to work real well for me!

Ingredients

Serves: 3-4

  • seafood (whatever leftover seafood you have)
  • 1 sweet potato (boiled and mashed)
  • 2 fresh green asparagus
  • 4 eggs
  • 1 tub cream
  • salt
  • pepper

Method

  • Preheat oven to 180. Spray a round cake try well 9about 20 - 23cm) Make sure the tin closes tightly.
  • Spread mashed sweetpotato evenly on the bottom
  • Sprinkle seafood on top of sweetpotatoes (as much as you like)
  • Beat eggs and cream well, if to thick add some milk (50 - 100ml)
  • Pour over the top
  • Put the asparagus on top
  • In the oven we go for about 40 - 45 min.
  • Additional Information

    Oven time may vary as my poor old thing has had its days! Just make sure it doesn't burn on top
