If you have duck eggs don't try to whisk the whites if left over for a meringue as this won't work, trust me they will not respond like regular egg whites. I tried this and got nowhere fast so I gave up, and covered the duck egg whites and put them in the fridge and I used them in scrambled eggs. They scramble just the same as hen eggs.
