I'm a self taught baker. Learning as I go. Got this idea when I made a 4 layer sponge for the first time. Instead of using a spatula to spread frosting on each layer, I used a large icing bag & a large Wilton open star nozzle to apply a layer of frosting, no need to spread - top with next layer cakes until layers complete then 'dirty ice' the cake to settle crumb.
