If you have any leftover fresh pesto, smooth the top then pour a thin layer of olive oil over the surface, which excludes air and stops the pesto going an unattractive brownish green. Replace the lid and keep in the fridge. Stir the oil in to the pesto before using. This will extend the life of the pesto by at least a week.
