I substitute King Arthur's Gluten free Flour for the AP flour and use full fat coconut milk instead of dairy milk (I still add the same amount of butter your recipe calls for but you can also omit it as there is plenty of lovely fat in the coconut milk) the flavor and tenderness produced is wonderful. Add a topping of wild blueberries mixed with blackberry jelly and dust with powdered sugar, true heaven on a plate. Dare I say these modifications improve an already perfect recipe? Maybe, give it a try and let me know what you think. I found your pancake recipe years ago before my son was born in 2010 and it is all I have used since. My son is allergic to just about everything but with these modifications we can still enjoy our favorite pancakes once a week. Thank you!! -Penny :>)
