When making hummus I now add in a small tub of semi-dried tomatoes, blending it with the tinned chick peas, garlic to taste, good olive oil, salt and lemon juice to taste. I don’t use tahini but you can if you wish.
‘Tummus’ takes on an earthy red colour when blended and is great to dip into with pita chips, crudités or spread onto pizza bases to use in place of a sauce. It’s even yummy on a pastrami sandwich with dill pickles served on the side.
