Alternative Fish For Kedgeree

Nigella's Salmon Kedgeree With Lime And Coriander (from NIGELLA BITES) is a warmly-spiced rice dish with poached salmon. It is possible to substitute other fish and our first preference would be to use either arctic char (which is similar to salmon), or otherwise smoked haddock, which is quite often used in kedgeree.

Rockfish encompasses several different families of fish, so we are not sure of the exact species being referred to. However, we would suggest using a mildly-flavoured fish that has fairly thick, meaty fillets and that breaks into large flakes once it has been cooked. Thin fish fillets can be difficult to poach in the oven without over cooking and can break up too easily in the kedgeree. It should be possible to use thick fillets of pacific rockfish, otherwise cod, haddock, pollock, halibut and coley would all be good alternatives and if possible try to use fish from sustainable sources.
