Alternative To Cherries In Marzipan Fruit Cake

Full question

The Marizipan Fruit Cake recipe is great as it replaces mixed peel with dried pears. However, I am also not a fan of glacé cherries and hence wondered what these could be replaced with?

Our answer

Nigella's Marzipan Fruit Cake (from HOW TO BE A DOMESTIC GODDESS) is a light fruit cake studded with dried and glacé (candied) fruits and nuggets of marzipan. Fortunately the glacé cherries do not affect the basic cake batter and can be substituted or omitted completely, if preferred.

It may be easiest just to add extra sultanas and chopped dried pears instead of the cherries, maybe using 50g extra of each to match the 100g glace cherries. Another alternative would be to use 100g dried apricots. We would suggest using the soft, ready-to-eat type of dried apricots and cutting each into quarters, so that each piece is approximately the size of a half glacé cherry.
