Nigella's Apple And Almond Cake (from FEAST) is a moist, gluten-free cake thanks to the addition of apple puree and ground almonds (almond meal). The ingredients are blitzed together to a smooth batter in a food processor.

It is possible to make the cake without a food processor but you will need to make the apple puree smoother. You can beat the apples with a spoon to remove most of the lumps, or you can puree the cooked apples with a hand blender. To make the cake, whisk the eggs and sugar together in a large bowl until the eggs are paler in colour and about doubled in volume. This is considerably easier if done with an electric hand mixer or freestanding mixer, though it is possible also to do it with a large whisk and plenty of elbow grease. Fold in the apple puree, ground almonds and lemon juce and then pour the batter into the prepared cake tin, sprinkle over the flaked (sliced) almonds and bake following the instructions in the recipe.
