Apple Puree for Apple and Almond Cake

Do you have a weight for the apple puree used in the Apple And Almond cake? I have some apple puree that I would like to use. Thanks

Our answer

Nigella's Apple And Almond Cake (from Feast and on the Nigella website) uses a home-made apple puree that is made from 3 apples. Nigella suggests Braeburn apples. The puree weighs about 285g (generous 1 cup).

It may be possible to use a store-bought apple puree but we would note that in our experience the store-bought versions tend to be slightly runnier/more liquid than home-made versions. So we cannot guarantee that the results will be exactly the same. You will also need to check if the store bought version is sweetened or unsweetened. If it is unsweetened then add an extra 15g (1 tablespoon) caster (superfine) sugar to the mixture. Once the cake batter has been blitzed in the food processor check that you have a fairly soft batter. If it is very stiff then add extra apple puree 1 tablespoon at a time until the batter reaches a soft consistency.
