Apples for Gluten Free Apple and Blackberry Pie

Full question

The Gluten-Free Apple And Blackberry Pie recipe says, "you probably could make the dough stretch to line and cover a 22cm/9-inch pan or dish, it is less stressful to use the size recommended," but I don't see what the recommended size is. Also, any thoughts on a substitute for Bramley apples? I'm in the US and we don't carry that type here.

For the Gluten-Free Apple And Blackberry Pie (from Simply Nigella and on the Nigella website) Nigella mentions using a cast iron skillet. The skillet is approximately 20cm (8 inches) in diameter.

Bramley apples are a type of sour apple that cooks very easily to a puree or to apple sauce. They are also very sharp. They are grown by a few orchards in the US and you will most likely find them at farmers' markets in the late autumn. However Granny Smith apples are a very good substitute for Bramleys and are more readily available all year round.
