Baking Powder In Pancake Mix
Asked by Shewhomust. Answered on 14th September 2016
Full question
The recipe for make-ahead pancakes mix has 3 tablespoons of baking powder. Is this correct? I've never used that much in any recipe before. Thank you.
Our answer
Nigella's Home Made Instant Pancake Mix (from NIGELLA EXPRESS is a mixture of flour, salt, sugar and leavening agents in the form of baking powder and bicarbonate of soda (baking soda). This mixture gives light and fluffy American-style pancakes.
The 3 tablespoons of baking powder is correct and is not excessive when you consider that it is for 600g (4 cups) of plain (all-purpose) flour. This quantity gives enough for 4 batches of pancakes, with approximately 15 pancakes in each batch. When you look at the ratio of baking powder to flour it is about the same as for store-bought self-raising flour (it works out at 2 1/4 teaspoons per 150g/cup of flour). The dry pancake mixture should be kept in an airtight conatiner in a cool, dry place and is at its best if used within 3 months of making.

I also add dry buttermilk powder so I don't have to add milk. I don't use buttermilk for much of anything else and I don't drink milk so if I want buttermilk pancakes I have to go out and buy some and then have half a quart left in the fridge.
