I have made Nigella's Banana Skin Curry several times and enjoyed it each time. Even though I assume that any spare banana skins could be frozen for use in a curry, would they have to be defrosted first before being soaked, or would the hot water defrost them enough during the soaking time?
Our answer
Nigella's Banana Skin Curry (from COOK, EAT, REPEAT) is a good way to use up banana skins from the Chocolate Tahini Banana Bread or the Gluten-Free Banana Bread. As you can freeze bananas you can also freeze banana skins to use at a later date. Our preference would be to defrost the skins overnight in the fridge before using them in the recipe.
If you do have to use the skins from frozen then we suspect that it may be easier to put the frozen skins in a small saucepan and add just enough water to cover. Put on a low heat and bring the pan just up to boiling point then remove from the heat, add the turmeric and salt and leave to cool.
