Biscuits In Tart Bases

Hi, this is probably a stupid question but please can you clarify something for me? When Nigella specifies to use bourbon or Oreo biscuits (to make tart bases), are you using the biscuit only or are you using the biscuits along with their respective fillings?

Our answer

Nigella's Salted Chocolate Tart (from SIMPLY NIGELLA) uses crushed Oreo cookies in the base and the Grasshopper Pie (from KITCHEN) uses crushed bourbon biscuits in the base. Both of these are crisp biscuits that are sandwiched with a creme filling.

You should use the whole biscuits, including the filling. The filling mixes in with the cookie crumbs and helps to bind the tart base together, along with a little added butter. Without the filling the crumb mixture would be too dry, though if you need to use an unfilled biscuit as an alternative then you could add some extra butter to help the biscuit crumbs to hold together.
