Our answer

Nigella's Gluten-Free Banana Bread is a moist and tender cake that is made with gluten-free flour and ground almonds (almond meal). It is sweetened with the bananas and also with some soft light brown sugar. We would not particularly recommend using honey as a substitute for the sugar as this will affect the taste and texture of the banana bread. Honey is sweeter than sugar so you would need to adjust the quantities used and also you would need to adjust the amounts of some of the other ingredients such as the yogurt and baking powder.

If you have difficulty in finding soft light brown sugar than you can use a combination of molasses and white sugar instead. For this particular recipe we suggest that you use 125g (2/3 cup) white sugar plus 2 teaspoons of molasses. If you can't find molasses then you could use 2 teaspoons of honey instead.
