Banana Cake With Meringue Icing

Sift together flour, baking powder and baking soda. Place remaining ingredients in a food processor and process until smooth. Pour over dry ingredients and mix until just smooth. Pour into two 9" cake pans (greased and floured) Bake in 375 degree oven for about 30 minutes.
Combine all ingredients except vanilla in the top of a double boiler and set over boiling water. Beat constantly with an electric hand beater until stiff peaks form. Remove from heat and add vanilla, beat until cool.
Introduction
Delicious, easy to make. Icing holds up very well.

For the Cake
- 2½ cups flour
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- 2 eggs
- ¾ cup butter
- 4 medium bananas
- 1 tablespoon instant coffee
- 1½ cups granulated sugar
- 1 teaspoon vanilla
- ¼ teaspoon salt
For the Meringue Icing
- 2 egg whites
- 1½ cups brown sugar
- ¼ teaspoon cream of tartar
- ⅓ cup water
- 1 teaspoon vanilla
