Full question
I would like to try the Triple Chocolate Buckwheat cookies but I don't have buckwheat flour readily available. If I can't find buckwheat flour can I blend up kasha in a food processor instead?
Our answer
Nigella's Triple Chocolate Buckwheat Cookies (from SIMPLY NIGELLA) are made with buckwheat flour. This gives the cookies a slightly nutty flavour, as well as making the cookies gluten-free.
We assume that for kasha you are referring to toasted buckwheat groats (as opposed to the cooked dish of kasha). It may be possible to grind the groats to a flour using a food processor, but as we have not tried this ourselves we are unable to give advice. Buckwheat flour is usually available from natural food stores and is also available on-line. If you are able to use plain (all-purpose) flour then you may like to try Nigella's Totally Chocolate Chocolate Chip Cookies instead, but please bear in mind that these cookies are not gluten-free.
