Our answer

Nigella's Soft White Dinner Rolls (from FEAST) are home made bread rolls that are wonderful when warm but will also keep in an airtight container for a day or two and the rolls can be split and toasted if a couple of days old. The dough is slightly enriched as it is made with milk and butter.

For preference Nigella uses unsalted butter in baking as it is easier to control the amount of salt in a dish. This is particularly important in yeast-based baking as too much salt can retard the action of the yeast, meaning that the dough does not rise as well. If you can only find salted butter then you can certainly use this but we would suggest reducing the salt in the recipe slightly. The amount of butter used (25g) contains the equivalent of about one large pinch of salt, so we suggest measuring out the ½ tablespoon (1½ teaspoons) salt and removing a large pinch before adding the salt to the flour mixture.
