Cake Too Sticky

Full question

I made the Dark And Sumptuous cake, the flavour was great, but is quite sticky. How do I reduce the stickiness of the cake?

Our answer

Nigella's Dark And Sumptuous Chocolate Cake from (SIMPLY NIGELLA) has a very liquid batter, which yields a very moist cake. The cake should be slightly fudgy and will not have quite the same structure as a Victoria sponge cake. However, if the cake is sticky on the surface then we suspect that it may be because the cake was not baked for quite long enough. The cake should be baked until the sides of the cake are pulling away from the tin. A cake tester inserted into the centre should come out clean or with one or two cake crumbs attached, but not uncooked batter. The top of the cake should look dark and shiny.

If you are storing the cake then make sure that it is fully cold before putting it in an airtight container, as if it is still warm then moisture will form on the surface of the cake, making it sticky. And if you freeze the cake unwrap it before defrosting, again to reduce the risk of moisture forming on the outside of the cake.
