Hi, I absolutely love the Dark And Sumptuous Chocolate Cake. I have a friend who is vegan and I wanted to make some muffins for her birthday. I would like to know if the recipe could be adapted to make muffins? I've found other vegan recipes stick to the tin or soak into the muffin cases.

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) can be made into cupcakes, rather than muffins, and the recipe should be enough to bake up to 24 cupcakes, if you fill each cupcake paper liner 1/2 to 2/3 full of batter. However the cake has quite a liquid batter. This gives a very moist and tender cake but does tend to turn the paper liners slightly soggy. You may be able to mitigate this slightly by doubling up the paper liners or using foil cases that are lined with paper. We would avoid baking this in cupcake form without paper liners as the cake is very tender and likely to break up when the cupcakes are removed from the pan. The baking time for cupcakes is likely to be around 15 minutes. However we have not tried this version so are unable to guarnatee the results.
The ganache-style frosting can be used to coat the top of the cucpcakes, though you may need to let it cool and thicken slightly more. Otherwise you can make a buttercream-style frosting using vegan ingredients and top the cupcakes with a swirl instead.
