Can I Adjust The Rosemary Remembrance Cake Recipe For A Larger Tin?

Full question

I'm hoping to make Nigella's Rosemary Remembrance Cake, but the recipe is only designed for use in a 1lb loaf tin. Do I need to double the recipe to fit into my 2lb loaf tin? Thank you!

Our answer

Nigella's Rosemary Remembrance Cake (from Feast and on the Nigella website) is similar to a pound cake or madeira cake. It is baked in a loaf tin and the recipe states a 1lb/450g loaf tin. Unfortunately there can be some confusion over the description of loaf tins and the dimension of the tin should be approximately 23 x 13 x 7cm (9 x 5 x 2¾ inches).

We will be amending the recipe in future reprints to use the tin dimensions and going forward Nigella's recipes will give loaf tin dimensions rather than using the loaf weight.
