Our answer

Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is a sticky ginger cake that can be eaten as a dessert or alongside a cup of tea or coffee. The cake is baked in a 23cm (9-inch) square tin. Whilst it may be possible to bake this as a loaf cake, the size of loaf tin mentioned is too small for the amount of batter in the recipe.

The size of the loaf pan approximates to a 900g (2-pound) loaf tin and we estimate that this size of pan would need only a half quantity of the Luscious Vegan Gingerbread recipe. It should be fairly easy to measure out a half quantity of the ingredints. The loaf pan should be lined on the base and sides with baking parchment, or use a paper loaf tin liner. Fill the tin no more than 3/4 full of batter. The baking time at 170°C/150°C fan/325°F is likely to be 50 minutes to 1 hour and we suggest baking until the top of the cake bounces back when pressed with a finger and a cake tester comes out with damp crumbs attached to it, but not uncooked batter. The cake batter is quite high in sugar and can burn more easily than some loaf cakes, so keep an eye on the cake after the first 40 minutes and cover the top with foil if it looks like it is becoming too dark. Like the square cake, it is probably better to leave the gingerbread to cool completely in the tin and then wrap and store overnight before turning out and cutting it. However, please note that as we have not tried the cake in loaf form, we are unable to guarantee the results.
