Can I Freeze A Cooked Lasagne Of Love?

Can Nigella’s Lasagne Of Love be frozen after it’s been cooked in the oven? I’ve made two, but already added the cheeses and I’m assuming the pre-cooked cheeses will just become soggy and tasteless.

Our answer

Nigella's Lasagne Of Love (from COOK, EAT, REPEAT) is a dish that is great for large parties. We are not sure if the lasagne is being made ahead for a party or if it is batch cooking to reheat portions later, but if you are making it ahead then we prefer to freeze the assembled but not-yet-baked lasagne without the mozzarella and Parmesan topping, then defrost and bake it when needed. It takes about as long to reheat the whole lasgane as it does to bake it normally and a whole reheated lasagne can be drier, with softer noodles.

If you are batch cooking for future meals, or have leftovers, then we suggest freezing the lasagne in individual portions in airtight containers for up to 3 months. This makes defrosting and reheating much easier. Thaw the lasagne portions overnight in the fridge and reheat in a microwave until piping hot all of the way through. The cheese crust will be softer as it is never as crisp as when the lasagne is freshly baked, though it should still have a good flavour. You could always grate a little extra Parmesan over the top just before serving.
