Hi there! I was wondering if you can freeze the Guinness Gingerbread? I love this but it’s just my husband and I at home now and we won’t eat it all.

Our answer

Nigella's Guinness Gingerbread (from KITCHEN) is a moist and sticky gingerbread cake. It is not quite as sweet as some gingerbread recipes thanks to the slightly bitter note than comes from the Guinness. The gingerbread keeps quite well as it is so moist. Store for up to two weeks in an airtight container in a cool place.

The gingerbread can also be frozen and if you are freezing leftovers then you may prefer to wrap individual portions with food wrap and then put these in an airtight container. Freeze for up to 3 months. Individual pieces should thaw in 1-2 hours at room temperature. The gingerbread can be a touch more sticky after it has been frozen, so you may find that a little of the top surface of the cake sticks to the food wrap after defrosting, but this is just cosmetic and does not affect the rest of the cake in any way.
