Full question
I love the Peanut Butter Hummus but it makes an awful lot. Can I freeze any left over?
Our answer
Nigella's Peanut Butter Hummus (from KITCHEN) uses smooth peanut butter instead of tahini. This is not as strange as it sounds since tahini is a paste made from ground toasted sesame seeds and is, in effect, sesame seed butter.
Hummus can sometimes split when it is frozen and then thawed. So if you freeze the hummus you may need to beat it or whizz it in the food processor briefly to restore the texture. Freeze the hummus in an airtight container on the day you make it. The hummus will keep in the freezer for up to 3 months. Thaw overnight in the fridge and eat within 2 days.
