Full question
Is it possible to freeze the Pecan-Plus Pie?
Our answer
Nigella's Pecan-Plus Pie (from NIGELLA CHRISTMAS) is an Anglo-American version of the classic pie that uses mixed nuts instead of just pecans. The pie can be made up to 2 days ahead and then kept in an airtight container until needed.
We generally prefer not to freeze this pie as there is the risk it will be a little soggy on defrosting. But if you did need to freeze it then leave it in the tart pan, wrap it tightly in a double layer of food wrap and a layer of foil and freeze for up to 3 months. To thaw the pie, unwrap it and put a fresh piece of food wrap over the top, then leave it in the fridge overnight. Take the pie out of the fridge 2-3 hours ahead of serving to let it come to room temperature. If you have leftover slices of a pie that has not been previously frozen, wrap these individually with food wrap, put in a resealable container and freeze for up to a month. Thaw as for the whole pie.
