Full question

Nigella's Brownies are a huge hit among all my friends and there are rarely any leftovers. However, this time there are a lot leftover. Is it possible to freeze them?

Our answer

Nigella's Brownies (from HOW TO BE A DOMESTIC GODDESS) are good at any time, but if you stack them up and add cake candles then they make a good alternative to a traditional birthday cake. The leftover brownies will keep in an airtight container in a cool place for up to 5 days and can also be frozen.

To freeze the brownies, put them in an airtight container. If you are stacking the brownies in the container then it is a good idea to put a piece of baking parchment (parchment paper) in between each layer of brownies so that they are not stuck together when frozen. This makes it easier to remove just one or two at a time from the container if you don't want to thaw them all at once. To thaw the brownies, remove them from the container and leave at room temperature for 2-3 hours. The brownies will keep for up to 3 months in the freezer if cut into bars. If they are cut into small bite-sized squares then we would suggest that you try to eat them within one month so that they are at their best. Smaller items are more susceptible to freezer burn, which can affect the quality slightly (though if they are stored for longer than this, they are still safe to eat).
