Full question
I would love to make the Green Tahini Sauce recipe. My question is, can this be frozen for future use? And if it is possible to freeze this sauce, how long can it be frozen for?
Our answer
Nigella's Green Tahini Sauce (from COOK, EAT, REPEAT) is a herby multipurpose sauce that can be served with roasted vegetables, fish, meat, soup or even as a dip. It keeps in the fridge for up to 5 days, though may need to be stirred before use if it separates.
Tahini itself freezes well and there doesn't appear to be any particular reason why the sauce will not freeze. However, there is a chance that it may lose some of its vibrant verdant colour on thawing. Also, it is possible that the sauce will separate slightly when it thaws, but should come back together if you shake it in a tightly-closed jar or give it a short blend with a stick blender. We would suggest freezing the sauce in an airtight container for up to 3 months. Thaw overnight in the fridge and use within 1-2 days.
