The No-Bake Advocaat and Ginger Cake looks great, can the assembled cake be frozen?
Our answer
Nigella's No-Bake Advocaat And Ginger Cake has layers of sticky ginger cake that are sandwiched with an avdocaat-enriched cream and studded with dried figs, crystallized ginger and macademia nuts. The cake will keep for up to 5 days in the fridge.
If you do want to freeze the cake, we would suggest spreading the top layer of mascarpone cream over the cake, wrapping the tin in a double layer of food wrap and a double layer of foil and freezing for up to 1 month. Thaw overnight in the fridge then unwrap and unmould as described in the recipe and top with chocolate sprinkles just before serving.
