Full question
Is it possible to make ahead and freeze the Pear, Pistachio And Rose Cake?
Our answer
Nigella's Pear, Pistachio And Rose Cake (from AT MY TABLE) is a gluten-free cake made with ground almonds and pistachios that are mixed with puréed pears. The cake is moist, tender and fragrant.
The cake itself is not ideal for freezing, particularly for a special occasion. As it is a moist cake, it tends to get quite sticky on the surface when it defrosts. Also, as it is gluten-free it is quite delicate so needs to be frozen on the base of the cake pan, for extra support. If you need to make the cake in advance, we suggest baking it 1-2 days ahead and storing it in an airtight container in a cool place. You can glaze the cake and add chopped pistachios and rose petals just before serving. If you have to freeze the cake, wait until the cake is completely cold, unspring the cake from the pan and wrap the cake, still on the base of the tin in a double layer of food wrap and a layer of foil. Freeze for up to 3 months. To defrost the cake, unwrap it, cover loosely with food wrap and leave in a cool place overnight. Remove the food wrap carefully as it can stick to the top of the cake. Glaze and decorate the cake before serving.
