Full question
I would like to make the Sausage And Spinach Pie from Domestic Goddess in advance. Can I freeze this particular pie?
Our answer
Nigella's Sausage And Spinach Pie (from HOW TO BE A DOMESTIC GODDESS) is a double crust pie made in a springform pan, similar in style to the Pizza Rustica. The pie has a filling made from onions, sausages, cooked spinach and Parmesan.
Unfortunately it is difficult to make the pie in advance as the spinach causes the filling to be quite wet and this can lead to the pastry base becoming soft and soggy. Even if you freeze the assembled pie, the spinach will tend to seep out liquid as it defrosts, even if you have squeezed a large amount of liquid from it after cooking. You could make the pastry and filling in advance, freeze them and then defrost them and assemble the pie when you need it. The pastry and filling can be frozen for up 3 months. Form the pastry into two discs, wrap each disc in food wrap and then put them into a resealable bag before freezing. Thaw the pastry overnight in the fridge and remove from the fridge about 10 minutes before rolling out. The filling can be made in advance and frozen in an airtight container (cool and refrigerate/freeze within 2 hours of cooking). Thaw overnight in the fridge and discard any excess liquid before using.
