Can I use gluten-free flour in the Home Made Instant Pancake Mix recipe?
Our answer
Nigella's Home Made Instant Pancake Mix (from NIGELLA EXPRESS) is a dry mixture of flour, sugar and leavening that can be mixed quickly with eggs and milk to make thick American-style pancakes. We suspect that it is possible to switch the plain (all-purpose) flour for a plain gluten-free flour blend or an all-purpose gluten-free baking blend.
However, please bear in mind that a gluten free pancake will not be exactly the same as one made with wheat flour as the texture will be slightly different and the pancakes may be slightly less fluffy. Also, they will be more tender than wheat flour pancakes, so remove them carefully from the pan as they could break up more easily. Often you need to add extra liquid to a recipe for gluten-free flours but we suspect that for the pancakes you will want a slightly thicker batter, so only add extra liquid if the pancake batter is exceptionally thick. And please note that as we have not tried the recipe with gluten-free flour, we are unable to guarantee the results.
