Can I Make Instant Pancake Mix Without Egg?

I have made up some of Nigella's Instant Pancake Mix and stored it. But I would like to make the pancakes up without using eggs. I was wondering what I should use and amounts? Thank you Natalie

Our answer

To make pancakes from Nigella's Instant Pancake Mix (from Nigella Express and on the Nigella website) you need to whisk together 150g/1 cup of the pancake mix with 1 egg, 250ml/1 cup milk and 1 tablespoon melted butter. The eggs do help to give some richness and leavening to the pancake mixture.

We would prefer not to leave out the eggs and if you are making a smaller quatity of the batter then you could use 1 egg yolk to 75g/½ cup mix plus 125ml/½ cup milk and half a tablespoon of melted butter. You can freeze the left over egg white to use in another dish. If you really have to leave out the egg then you could try using 270ml/1 cup plus 2 tablespoons milk and 45g/3 tablespoons melted butter to 150g/1 cup of the mix, but as we have not tried this ourselves we cannot guarantee the results.
