I wondered if Nigella’s Vegan Gingerbread can be made gluten free? E.g. using gluten free flour? Thank you.
Our answer
Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) is a moist and sticky cake that is equally good as a dessert or with a cup of tea or coffee. The cake doesn't contain any eggs and uses oat milk.
We did try the cake with a gluten-free flour (a plain gluten-free flour blend for baking), as Nigella was keen for as many recipes as possible to have gluten-free options, but unfortunately the cake sank drastically in the centre as it cooled and had a texture that was very close rather than spongy. We suspect that it was a combination of both the lack of egg and lack of gluten that caused this. So unfortunately we can't recommend making the Luscious Vegan Gingerbread with gluten-free flour. However, the Mine All Mine Sweet And Salty Chocolate Cookies can be made both gluten free and vegan.
