Can I make a large Cappuccino Pavlova using double the ingredients for a single meringue? How long would it take to bake in the oven? Thanks!
Our answer
Nigella's Cappuccino Pavlova (from NIGELLISSIMA) is a coffee-flavoured meringue that is topped with whipped cream, rather like the froth on a cup of cappuccino. The meringue is made with 4 egg whites and 250g (1¼ cups) caster (superfine) sugar.
We suspect that it may be possible to double the quantities to 8 egg whites and 500g (2½ cups) sugar, 8 teaspoons espresso powder, 4 teaspoons cornflour (cornstarch) and a large pinch of salt. Nigella has a large meringue with 8 egg whites in NIGELLA CHRISTMAS and using this as a guideline you should spread the meringue into a 25cm (10-inch) diameter circle and then bake for 1 hour, using the same temperature settings as for the regular-sized Cappuccino Pavlova. Turn off the heat and let the meringue cool completely before removing it from the oven. However, please note that as we have not tried the Cappuccino Pavlova with this quantity of ingredients, we are unable to guarantee the results.
