Can I Make A Smaller Sticky Toffee Pudding?

Full question

I'm planning on making the STP from At My Table for Christmas Day for the non Christmas pudding eaters (me and my son) - would it work if I halved the quantities to make a smaller one and if so what size dish would you suggest? Thank you!

Our answer

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is a slightly more adult version of the classic pudding sponge as it uses treacle and dark brown sugar, which have slightly bitter notes to balance the sweetness. The recipe will serve up to 9 people.

It is possible to make a smaller version but we would suggest not making less than half of the recipe, as the quantity of egg is difficult to measure. A 23cm square pan has a capacity of approximately 1.9 litres, so a half portion would need a dish with a capacity of around 1 litre. For the baking time we would estimate at 20-30 minutes, depending partly on whether the pan is made of metal, heatproof glass or ceramic. So we would suggest checking at 20 minutes and then if not quite done, check the pudding at 3-5 minute intervals after that.
