Our answer

It may be possible to make Nigella's Chocolate Salame (from Nigellissima and on the Nigella website) with white chocolate rather than dark (bittersweet) chocolate but you would need to make some adjustments. White chocolate does not contain any cocoa solids, only cocoa butter, sugar, milk solids and usually some vanilla. Dark and milk chocolates contain some cocoa solids and these are important as they help the salame to set.

So for a white chocolate version you need to use a higher ratio of chocolate to the other ingredients. You will need to increase the amount of chocolate by 1.5 to 2 times the original recipe. In addition white chocolate has a lot of sugar so you will need to reduce the amount of sugar in the recipe to prevent it from being too sweet. We would suspect the sugar needs to be reduced by about one third (to 100g/1/2 cup). Unfortunately as we have not tried this version we can only give suggestions and can't guarantee results.
