White Chocolate Pistachio Truffles

Heat the cream over gentle heat in a heavy bottomed pan. Bring to a boil and remove from heat. Add white chocolate and Malibu and mix well till smooth. Refrigerate till firm. This is the truffle. Divide the truffle into 30 equal portions. Shape into rounds. Roll the truffle rounds in the pistachio and dessicated coconut till well coated. Refrigerate till firm. Wrap in some chocolate paper and take along in a basket!

- ⅓ cup fresh cream
- 1 tablespoon malibu (coconut liqueur)
- 3 tablespoons coarsely powdered pistachios
- 3 tablespoons unsweetened shredded coconut
