Full question
I would like to make the Birthday Custard Sponge as cupcakes. Would that work? If so, please could you give me an idea of oven temperature and cooking time, please? Thank you in advance for your response.
Our answer
Nigella's Birthday Custard Sponge (from FEAST) is a Victoria-style sponge layer cake that has custard powder added to give a yellow tinge and and a slight vanilla flavour. The cake layers are 20cm (8 inches) in diameter and normally this would convert to 24 cupcakes if using the slightly smaller UK "fairy cake" cases. If you are using deeper muffin cases then you may get around 18 cupcakes. Don't fill the paper cases more than half full with batter.
The oven temperature should remain the same and cupcakes usually take around 15-18 minutes at this temperature, though ovens vary so you may need a minute or two longer. The cucpakes should be risen and a cake tester inserted into the centre should come put clean. Cool the cupcakes in the pans for 10 minutes then transfer them to a wire rack and let them cool completely. If you are using the buttercream then you will probably need to make a double quantity, as the cupcakes will need more than the layer version of the cake.
