Full question
Hello Nigella, I am a big fan of yours. I am organising a Christmas party and I am going to give out gift bags to my friends that day, I am preparing the Chilli Jam (red colour) and I was wondering if it is possible to cook something similar with green chillies and bell peppers (green colour)? Would it work out ok?
Our answer
Nigella's Chilli Jam (from NIGELLA CHRISTMAS) is a spicy condiment that is perfect at Christmas with cheeses, charcuterie and cold cuts. It is made with red chillies and red (bell) peppers for a seasonal spash of colour.
It is possible to make the Chilli Jam with green chillies and green (bell) peppers. However, green chillies are not usually as spicy as red chillies so the jam may not have quite as much punch. But our main concern would be the colour of the jam. Red peppers and chillies keep their colour well when cooked but green peppers and chillies tend to discolour, especially when boiled for the amount of time required to set the jam. So instead of a festive bright green you may have more of a olive-coloured jam, which may not appeal quite as much.
