Can you make the Marmalade Pudding Cake recipe for ramekin dishes instead of an 8” square dish?

Nigella's Marmalade Pudding Cake (from KITCHEN) is an orange marmalade-flavoured sponge that is topped with a marmalade syrup as soon as it comes out of the oven. The marmalade gives the pudding cake a slightly bitter edge, meaning that it is not too cloyingly sweet. The pudding cake is baked in a 20cm/8-inch square dish and served in generous spoonfuls.
There is no particular reason why you can't make individual portions and the number you make will really depend on the size of the ramekins, as they vary between 8cm/3 1/4 inches diameter to 10cm/4 inches diameter. If you fill the ramekin about three-quarters full of batter then the recipe will probably make between 8 and 12 portions. The baking time will also vary but check after 20 minutes of baking to see if they are done and then keep checking until the sponge is risen and firm to the touch and a cake tester inserted into the centre comes out clean or with a few damp crumbs (but not uncooked batter) attached. Brush the tops of the sponges with the marmalade glaze when they come out of the oven. The smaller size means that the individual pudding cakes will not stay warm as easily as a larger version, so you should serve them as soon as possible after baking and glazing.
