The recipe for Old Rag Pie sounds amazing. Can it be made in individual portions in something like a muffin or giant muffin tin?
Our answer
Nigella's recipe for Old Rag Pie (from SIMPLY NIGELLA) is a pie that has layers of feta interleaved with filo pastry. The pie is based on a traditional Greek recipe that used up leftover scraps of filo. The pie is made in a 20cm/8-inch square pan.
In theory this should be enough for 6-8 jumbo-size muffin cups. However, we are not sure if the recipe is really that suitable for conversion. Filo pastry is quite delicate even when baked and we feel that getting individual pies out of their moulds in one piece could be quite difficult, particularly as the honey can make the edges of the filo stick to the pan, which doesn't matter so much for a big pie but will make quite a difference for individual pies. In addition, the cups of muffin pans may not be quite deep enough to accommodate the cheese and scrunched up filo layers. Finally, you may actually end up needing more filo pastry that stated in the recipe as scrunching up pieces for individual cups could take more than if you were using one larger pan. So overall we would prefer to make one large pie and we wuld definitely avoid making small pies in a normal muffin pan.
