Can the batter for Nigella’s American Pancakes be made up (but not cooked) the night before and kept in the fridge?
Our answer
NIgella's American Breakfast Pancakes (from HOW TO BE A DOMESTIC GODDESS) are thick, fluffy pancakes that are perfect for breakfast with maple syrup and bacon or anything else you might like to serve with them.
Unfortunately we would not recommend mixing up the batter the night before as the baking powder, the raising agent that makes the pancakes puff up, is activated by liquid and only acts for a short period of time. If the batter is made too far in advance then the pancakes will not rise up and will be thinner. You can mix together the dry ingredients (flour, baking powder, salt and sugar) the night before in a bowl and then leave it covered until the next morning, then add the egg, milk and melted butter. You could also try Nigella's Home Made Instant Pancake Mix so that you can have the dry mixture on hand ready to quickly make pancakes whenever you would like.
