Full question
I would like to make Nigella's Apple & Walnut Crumble but don't want to use either raisins/sultanas or alcohol. Would dried cranberries, cherries or blueberries work and what should I use to pre-soak?
Our answer
Nigella's Apple And Walnut Crumble (from HOW TO EAT) has a raisin-studded apple filling topped with a crumble that includes chopped walnuts for an extra crisp texture. The raisins or sultanas are soaked first in a little marsala wine to hydrate them slightly, so that they are plump and juicy.
It is possible to change the sultanas or raisins for another dried fruit, or even omit them completely. If you are using dried cranberries, cherries or blueberries then just bear in mind that they can be slightly more tart than sultanas and raisins. You can use apple juice as a non-alcoholic alternative to the marsala wine. If you want to omit the fruit completely then put the chopped apple in a saucepan with 1 tablespoon of apple juice or water and cook following the instructions in the recipe.
