My daughter is dairy allergic & we are struggling for cakes & things that are dairy free! Would love to try to make your banana bread for the whole family as we are big fans of having toasted banana bread! Can I just replace the melted butter for either olive oil or coconut oil please?

Nigella's Banana Bread (from HOW TO BE A DOMESTIC GODDESS) is a moist banana bread that is studded with plump raisins and crunchy pieces of walnut. The banana bread is made with butter that is melted.
The easiest way to make the banana bread dairy free is to use a plant-based margarine instead of the butter. Most countries now have plant-based options that are sold in larger supermarkets. Otherwise, you can use vegetable oil or melted coconut oil, but as butter is 80% fat and 20% milk solids, you need to use a combination of oil and yogurt to prevent the banana bread from becoming too greasy. You should use 100ml/7 tablespoons of vegetable oil (or 100g/7 tablespoons meleted coconut oil) and 25g/2 tablespoons of a plant-based yogurt. We would tend to avoid using olive oil as its flavour can be quite strong, but a "light" or "light and mild" form oilve oil would be fine. You may also like to try Nigella's Chocolate Tahini Banana Bread as this is dairy free.
