Can I make the Beef and Beans with Pasta without the beef and without using a beef substitute such as soya mince?

Nigella's Beef And Beans With Pasta (from HOW TO EAT) is a one-pot dish where the pasta is cooked with a sauce made from minced beef, tomatoes, stock and a can of drained borlotti beans. If you wanted to make the dish meat free then you could replace the beef with a second can of drained beans. You may like to use two different varieties of beans to make it a little more interesting. Replace the beef stock with vegetable stock. Watch the dish towards the end of the cooking time, just in case it looks a little dry, and and add a splash of extra water if needed.
You may prefer to try Nigella's Vegan Spag Bol. It is not a one-pot recipe as you will need to cook the pasta in a separate pan, but it is a very comforting alternative to a regular spaghetti bolognese. The sauce also keeps for up to 5 days in the fridge and freezes well, so you can make it in advance and reheat it while the pasta is cooking.
