What flour should I use to make the Chocolate Gingerbread gluten free?

Nigella's Chocolate Gingerbread (from FEAST) is a spiced chocolate cake with a ginger-chocolate icing. The batter is made by the melt-and-mix method, which is quite liquid and these types of batters tend to adapt better for gluten-free flours, which absorb more liquid than regular flours.
However, we tend to find that the texture of cakes with gluten-free flours alone can be too close and stodgy. You could try a half and half combination of a gluten-free plain flour (or all-purpose baking blend) and ground almonds (almond meal or almond flour) but we have not tried this ourselves, so can't guarantee the results and as it is quite a big cake it may sink in the centre. You may like to try Nigella's Chocolate Tahini Banana Bread, which is made with rice flour.
